6 Ancient Vedic Temple Gravy Bases
- The Royal Makhani Base (Tomato-Cashew Cream): Soak raw cashews or melon seeds in warm water for 20 minutes, then grind into an ultra-velvety paste. Puree ripe tomatoes with fresh ginger and green chilies. Temper cumin seeds and a pinch of hing in pure cow ghee. Add tomato puree and simmer until the ghee separates. Stir in cashew cream for Shahi Paneer, Malai Kofta, and Navratan Korma.
- The Golden Besan Kadhi Base: Dry roast 2 tablespoons of chickpea flour (besan) in ghee on low heat until it releases a nutty aroma. Whisk into fresh yogurt or tomato gravy for instant thickness and comforting nutty richness.
- The Bengal Posto & Coconut Base: Grind freshly grated coconut with soaked white poppy seeds (posto), ginger, and green chilies into a paste. Simmer gently with seasonal vegetables tempered with kalonji.
- The Sweet Yellow Pumpkin Base (Natural Onion Duplicate): Steam or boil peeled yellow pumpkin (kaddu) or bottle gourd (lauki), then blend into a smooth puree. Saute with cumin, hing, and coriander. Exactly duplicates the sweetness, moisture, and thick volume of caramelized onions without sulfurous heaviness!
- The Fresh Malai / Khoya Base: Stir homemade clotted cream (malai) or unsweetened evaporated milk solids into simmering sauces just before turning off the heat.
- The Spiced Whisked Dahi Base: Whisk thick curd with coriander powder, turmeric, and roasted cumin powder before adding to tempered spices on low flame to prevent curdling.
