Aloo Tomato Sabji
Detailed Aloo Tomato Sabji (Rasedar Aloo) Recipe (Sattvik Style)
This is a classic 'Wet Sabji' native to ashrams and temple kitchens across North India. The potatoes simmer in a vibrant, tangy, Soupy tomato gravy. Served piping hot with puris or rotis, it is the ultimate comfort curry.
1. Ingredients
- Potatoes (Aloo): 3-4 medium (boiled, peeled, and roughly mashed by hand into uneven chunks).
- Tomatoes: 3 large, ripe red tomatoes (pureed or finely chopped).
- Ghee or Oil: 2 tablespoons.
- Cumin Seeds: 1 tsp.
- Ginger: 1 inch (finely grated).
- Green Chilies: 1-2 (slit).
- Turmeric Powder: 1/2 tsp.
- Coriander Powder: 1 tbsp.
- Kashmiri Red Chili Powder: 1 tsp.
- Garam Masala: 1/2 tsp.
- Hing (Asafoetida): 1/4 tsp.
- Kasuri Methi (Dried Fenugreek Leaves): 1 tbsp (crushed).
- Water: 2 cups.
- Salt: To taste.
- Fresh Coriander: Handful, finely chopped.
2. How to Cook - Step-by-Step Guidance
Step 1: Boil and Mash Boil the potatoes thoroughly. Once cooled, peel them and crush them roughly by hand. Leaving them uneven (some chunks, some mush) naturally thickens the gravy later.
Step 2: The Tempering Heat ghee in a pan. Add the cumin seeds to crackle. Add hing, grated ginger, and green chilies. Sauté for a few seconds.
Step 3: The Tomato Base Add the pureed or finely chopped tomatoes to the pan. Add the turmeric, coriander powder, Kashmiri chili powder, and salt.
Step 4: Cook the Gravy (Critical Step) Cook the tomato mixture on medium heat for about 7-10 minutes. The tomatoes must completely break down, lose their raw acidic sting, and release the ghee onto the sides of the pan. This indicates the masala is perfectly cooked.
Step 5: Simmer with Potatoes Add the crushed potatoes to the thick tomato base. Pour in about 2 cups of hot water (adjust for desired soupiness). Stir well and bring the curry to a rolling boil for 5 minutes. The broken potato starches will instantly thicken the broth.
Step 6: Flavor Finishing Crush the dried Kasuri Methi between your palms and sprinkle it into the curry along with the garam masala. Simmer for 1 minute. Turn off the heat and garnish heavily with fresh coriander.
3. What are the Health Benefits?
- Hydration and Satiety: Because of the high water and tomato content, it provides massive satisfaction with fewer calories than dry-roasted potatoes.
- Lycopene Rich: Highly cooked tomatoes release potent antioxidants that protect the heart and skin.
- Appetite Stimulant: The sharp tang of the tomatoes and ginger instantly activates saliva and digestive juices.
4. Who Can Avoid?
- Acid Reflux Sufferers (High Pitta): Ripe cooked tomatoes can heavily aggravate Pitta dosha. If experiencing severe heartburn, eat in strict moderation.
