Brinjal Sambar

Detailed Brinjal Sambar (Kathirikai Sambar) Recipe (Sattvik Style)

Brinjal Sambar holds a special, rustic place in traditional South Indian kitchens. When cooked alongside tamarind and lentils, the porous flesh of the tender purple eggplants literally melts in your mouth.

1. Ingredients

  • Toor Dal: 1/2 cup (cooked completely soft and whisked).
  • Brinjal (Eggplant/Aubergine): 4 to 5 small, tender purple/green brinjals.
  • Tamarind Extract: 1 small lemon-sized ball (soaked in warm water to extract thick juice).
  • Tomato: 1 medium (roughly chopped).
  • Sambar Powder: 2 tablespoons.
  • Ghee or Sesame Oil: 2 tablespoons.
  • Mustard Seeds: 1 tsp.
  • Fenugreek Seeds: 1/4 tsp.
  • Dried Red Chilies: 1-2 (broken).
  • Hing (Asafoetida): 1/4 tsp (generous pinch).
  • Turmeric Powder: 1/2 tsp.
  • Curry Leaves: A sprig.
  • Salt: To taste.
  • Coriander Leaves: For garnish.

2. How to Cook - Step-by-Step Guidance

Step 1: Lentil Pre-prep Thoroughly wash the Toor dal and pressure cook it with turmeric until entirely mushy. Whisk it to a smooth paste and set aside.

Step 2: Prepare the Brinjals Cut the tender brinjals vertically into quarters (or eighths if large). Crucial: Immediately drop the cut pieces into a bowl of normal water. This stops them from oxidizing and turning black, and removes any innate bitterness.

Step 3: The Tangy Boil In a large pot, combine the tamarind extract, 1 cup of water, chopped tomatoes, turmeric powder, sambar powder, and salt. Bring this mixture to a strong, rolling boil.

Step 4: Cook the Brinjals Drain the brinjal pieces and immediately drop them into the boiling tamarind water. Let them cook on medium heat. The acid in the tamarind will soften the brinjals without letting them fall to mush. Boil for 7-10 minutes until they are fully tender.

Step 5: Fold the Lentils Pour the smooth, creamy toor dal into the boiling pot. Adjust the consistency by adding hot water as needed. Let the sambar simmer together for 4 minutes so the brinjals absorb the lentil fat. Turn off the heat.

Step 6: Tempering Heat ghee or sesame oil in a small pan. Add mustard seeds. Once they crackle, add the fenugreek seeds until reddish brown. Add the broken red chilies, hing, and curry leaves. Pour the sizzling tadka over the sambar immediately. Cover, garnish with coriander, and rest for 5 minutes.

3. What are the Health Benefits?

  • Brain Function: Eggplants possess nasunin, a potent antioxidant in their purple skin that directly protects brain cell membranes from free radical damage.
  • High Iron Absorption: The massive amount of iron bound in the lentil protein is easily absorbed by the body due to the acidic tamarind and tomato base.
  • Satiety: The combination of soft eggplant fiber and thick dal keeps blood sugar perfectly stable for prolonged periods.

4. Who Can Avoid?

  • Inflammatory Joint Conditions: Brinjal is a nightshade vegetable. In Ayurveda, it is known to aggravate Pitta and certain types of Vata. Individuals experiencing acute flare-ups of rheumatoid arthritis, gout, or extreme eczema are advised to avoid it.
