Pumpkin Sambar

Detailed Yellow Pumpkin Sambar (Parangikkai Sambar) Recipe (Sattvik Style)

Yellow Pumpkin Sambar, often known as sweet pumpkin sambar or Parangikkai Sambar, possesses a uniquely mild, naturally sweet, and incredibly comforting flavor. It is a staple offering during festive feats and Ekadashi breaks.

1. Ingredients

  • Toor Dal: 1/2 cup (cooked until mushy and whisked smooth).
  • Yellow Pumpkin: 2 cups, diced into large chunks (skin removed).
  • Tamarind Extract: 1/2 cup of medium thick extract (do not make it overly sour).
  • Tomato: 1 small (optional).
  • Sambar Powder: 1.5 to 2 tablespoons.
  • Jaggery: 1 tsp (to elevate the pumpkin's natural sweetness).
  • Turmeric Powder: 1/2 tsp.
  • Ghee/Oil: 1 tablespoon.
  • Mustard Seeds: 1 tsp.
  • Fenugreek Seeds: 1/4 tsp.
  • Hing (Asafoetida): 1/4 tsp.
  • Curry Leaves: A sprig.
  • Salt: To taste.
  • Coriander Leaves: For garnish.

2. How to Cook - Step-by-Step Guidance

Step 1: Prep the Lentils Pressure cook the toor dal with the turmeric and a drop of cooking oil until extremely soft. Whisk or blend it to a smooth, velvety paste.

Step 2: Simmer the Tamarind Base In a large pot, add the tamarind extract, a cup of water, salt, sambar powder, and the optional chopped tomato. Let this mixture roar into a boil for 5 minutes to eliminate the raw tamarind smell.

Step 3: Tenderize the Pumpkin Add the large chunks of yellow pumpkin to the boiling tamarind water. Pumpkin cooks very quickly and has a tendency to disintegrate into mush if ignored. Cook on medium heat for 5-7 minutes until a fork passes through the chunks easily but they still hold their structural integrity.

Step 4: Marry the Flavors Stir the whisked toor dal and jaggery into the pot. Let the sambar simmer for 4 minutes so the sweetness of the pumpkin melds with the savory lentils. Turn off the heat.

Step 5: The Essential Tempering Heat ghee in a tadka pan. Add mustard seeds. When they pop, reduce the heat and add fenugreek seeds (methi). Let them turn slightly brown (do not let them turn black and bitter). Add the hing and curry leaves.

Step 6: Aromatics Pour the hot tempering over the Pumpkin Sambar. Close the lid for 5 minutes. Garnish with freshly chopped coriander leaves before serving with hot rice or idlis.

3. What are the Health Benefits?

  • Pitta Pacifying: Yellow pumpkin is highly sweet and cooling, making this Sambar incredibly soothing for inflamed stomachs (acidity, ulcers) and agitated minds.
  • Vitamins and Immunity: Rich in Vitamin A and Beta-carotene, drastically supporting overall eye health and immune response.
  • Low Calorie Satiety: Pumpkin lends deep thickness and body to the stew without adding aggressive carbohydrates or calories.

4. Who Can Avoid?

  • Severe Kapha Imbalance: Its deeply sweet, heavy, and cooling nature can slightly increase mucous in those suffering from active heavy colds or severe lethargy unless heavily spiced with black pepper.
