Ghee Rice

Detailed Ghee Rice Recipe (Sattvik Style)

Ghee Rice, or Neychoru, is a rich, aromatic, and deeply satisfying preparation. Because it relies heavily on the quality of ghee (clarified butter) and whole spices, it is considered a premium offering for festivals and special Deity offerings.

1. Ingredients

  • Rice: 2 cups of premium aged Basmati rice.
  • Ghee: 4 tablespoons of pure A2 cow ghee.
  • Whole Spices:
    • 1 inch Cinnamon stick
    • 3 Green Cardamoms
    • 4 Cloves
    • 1 Bay Leaf
  • Cashews: 2-3 tablespoons (split).
  • Raisins: 1 tablespoon.
  • Green Chilies: 2 (slit).
  • Water: 3.5 cups (if cooking in a pot) or according to rice cooker instructions.
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: Soak the Rice Wash the Basmati rice gently until the water runs clear. Soak it in water for exactly 20-30 minutes. Drain the water completely.

Step 2: Fry the Nuts Heat 2 tablespoons of ghee in a heavy-bottomed pot. Add cashews and roast until golden brown. Remove them. In the same ghee, plump up the raisins until they swell, and remove them. Set aside for garnish.

Step 3: Bloom the Spices In the remaining ghee, add the whole spices (cinnamon, cardamom, cloves, bay leaf). Sauté for 30 seconds until the kitchen smells fragrant. Add the slit green chilies.

Step 4: Roast the Rice Add the drained Basmati rice to the pot. Very gently sauté the rice in the ghee for 2-3 minutes on medium-low heat. This coats the grains, preventing them from turning mushy later.

Step 5: Cook Add 3.5 cups of boiling water and salt to the pan. Bring to a rapid boil. Once it boils, lower the heat to the lowest setting, cover with a tight-fitting lid, and cook for 10-12 minutes until all water is absorbed.

Step 6: Fluff and Garnish Turn off the heat but leave the pot covered for another 5 minutes. After resting, open and gently fluff the rice with a fork. Mix in the fried cashews and raisins. Drizzle the remaining 2 tablespoons of raw ghee over the top for an intense aroma.

3. What are the Health Benefits?

  • Ojas Building: Ghee is considered a supreme Rasayana in Ayurveda, building Ojas (vital immunity and life essence).
  • Lubrication: High-quality ghee lubricates the joints and promotes soft, glowing skin.
  • Mind and Memory: Consuming pure ghee nourishes the brain tissues (medhya) and sharpens memory and intellect.
  • Sattvic Purity: Because the recipe is incredibly clean without complex, heavy spices, it digests easily despite its richness.

4. Who Can Avoid?

  • Sluggish Digestion (Ama): Those with very weak digestion or severe accumulation of toxins (ama) should consume rich ghee dishes in severe moderation until their digestive fire (agni) is restored.
  • Obesity: High in calories, so individuals managing severe weight issues should avoid large portions.
