Curd Rice

Detailed Curd Rice Recipe (Temple Style)

Curd Rice, or Daddojanam or Thayir Sadam, is the ultimate comfort food and the traditional concluding dish of any South Indian sattvik meal. It represents peace, cooling, and absolute satisfaction.

1. Ingredients

  • Rice: 1 cup of short-grain rice (cooked soft and slightly mashed).
  • Milk: 1/2 cup (warm).
  • Curd (Yogurt): 1.5 cups of fresh, thick, non-sour homemade curd.
  • Ghee/Oil: 1 tablespoon.
  • Mustard Seeds: 1 teaspoon.
  • Urad Dal: 1/2 teaspoon.
  • Ginger: 1/2 inch (finely minced).
  • Green Chili: 1 (finely chopped).
  • Curry Leaves: 1 sprig.
  • Hing (Asafoetida): A pinch.
  • Salt: To taste.
  • Garnish: Coriander leaves, pomegranate arils, or a few grapes.

2. How to Cook - Step-by-Step Guidance

Step 1: Mash the Rice While the cooked rice is still hot, mash it slightly using the back of a ladle. It should be mushy but not a paste. Let it cool completely.

Step 2: The Creamy Mix Once the rice is cool, add the warm milk and mix well. Adding milk prevents the curd rice from turning sour over time. Then, gently fold in the fresh curd and salt. The consistency should be creamy and semi-liquid; it thickens as it rests.

Step 3: The Tempering Heat ghee or oil in a small tempering pan. Add mustard seeds. When they pop, add urad dal and let it turn golden.

Step 4: Aromatics Add the minced ginger, chopped green chili, curry leaves, and a pinch of hing to the oil. Sauté for a few seconds until fragrant and remove from heat.

Step 5: Combine and Garnish Pour the hot tempering over the creamy curd rice and mix gently. Garnish with fresh coriander leaves and pomegranate arils for a burst of color and sweetness.

3. What are the Health Benefits?

  • Probiotic Powerhouse: Fresh yogurt is packed with natural probiotics that are essential for maintaining a healthy gut microbiome.
  • Cooling and Calming: Curd rice acts as a natural coolant for the body, making it the perfect antidote to spicy foods inside a meal.
  • High Calcium: Excellent source of bone-strengthening calcium from dairy.
  • Sleep Aid: Lactic acid and tryptophan in the dairy can help promote a deep and restful sleep.

4. Who Can Avoid?

  • Nighttime Eating: Ayurveda advises against consuming heavy cold yogurt at night, as it can block internal channels (srotas) and increase mucous production.
  • Asthma and Severe Colds: Those with severe Kapha aggravation (coughs, sinus infections, asthma) should avoid or substitute yogurt with warm, light buttermilk.
