Vermicelli Kheer
Detailed Vermicelli Kheer (Semiya Payasam) Recipe (Sattvik Style)
Semiya Payasam is identical to Rice Kheer but cooks much faster, making it an excellent preparation for sudden festivals or unexpected guests. The thin wheat or rice vermicelli melts into the sweetened milk.
1. Ingredients
- Roasted Vermicelli (Semiya): 1/2 cup (if unroasted, roast it lightly in ghee until golden).
- Whole Milk: 3 to 4 cups.
- Sugar or Evaporated Cane Juice: 1/2 cup.
- Ghee: 1.5 tablespoons.
- Green Cardamom Powder: 1/2 teaspoon.
- Cashews and Golden Raisins: 3 tablespoons.
2. How to Cook - Step-by-Step Guidance
Step 1: The Roasting Heat one tablespoon of pure ghee in a pan. Fry the cashews until golden, then add the raisins until they plump up. Remove and set them aside. In the remaining ghee, roast the vermicelli on low heat until it achieves a uniform, deep golden brown.
Step 2: The Milk Infusion Carefully pour the milk directly into the pan over the roasted vermicelli. Turn the heat up slightly until it reaches a gentle boil, then immediately turn it down to simmer.
Step 3: The Softening Allow the vermicelli to cook in the milk. It cooks incredibly fast—usually within 8 to 10 minutes. The strands should be completely soft and the milk slightly reduced and thickened.
Step 4: The Sweetening Add the sugar. The mixture will thin out momentarily as the sugar melts. Continue to simmer for 3 to 4 minutes until it regains a creamy body. Add the cardamom powder.
Step 5: The Finishing Touch Turn off the heat. Stir in the ghee-roasted cashews and raisins. Be mindful that Semiya Payasam thickens considerably as it cools; you can add a little warm milk before offering if it becomes too dense.
3. What are the Health Benefits?
- Instant Comfort: It provides quick energy due to the simple carbohydrates from vermicelli and occurring sugars in milk.
- Digestive Soothing: The presence of cardamom aids in the digestion of dairy products.
4. Who Can Avoid?
- Gluten Allergy: Most commercial vermicelli is made from wheat (semolina). Those with celiac disease must strictly use rice vermicelli instead.
